The Topaze Estate
For ten years we had been floundering in the murky waters of Bordeaux while we contemplated the resumption of the family business preserved by Grandma Leontine. One fine day, we cast off from our the moorings to gain access to clearer, more serene waters, with green and yellow reflections.
It is in Monnières, at the heart of two magnificent rivers, the Sèvres and the Maine, that our vineyard is situated. It is here that we have built our house "Topaze"
Weather permitting, during the year we put everything in place so that the fruits mature by September. From our grapes, carefully hand-picked from our old vines, flows the gently pressed juice. After a few days this juice flows abundantly and we control the temperature as it transforms slowly in our vats. Topaze keeps its lees (natural wine deposit) until Spring: during these months it is stirred (to disperse the scum) to produce more complex flavours.
