History |
The Sauvaget family have been in the village of Monnières since the 19th century. After nearly 10 years in the Bordeaux region, Jean Paul decided, in 2001, to take up viticulture again. |

Vines aged 40 years or more; Size: Guyot-Nantaise 8 buds; Leaf-stripped and thinned out. Yield 40 hl /ha |

Wine production |
Grapes hand-picked and sorted at the vineyard. Gentle pressing to respect the fruit. Light cleansing in cold undergound vats, temperature-controlled, fermentation at low temperatures. Matured in their lees (sediment) until bottling, with stirring once a week (after tasting) |
